Book: Peak
It would be remiss not to mention this book by the late K Anders Ericsson and Robert Pool. It gives a good overview of Ericsson's body of work.

I love Ben and Carrie from VBT Podcast.

Read: The Cambridge Handbook of Expertise and Expert Performance (2nd edition)
This book is a tome!
If you want to geek out and dig your heels further into the literature of expertise, this latest edition is a heavy weight.
Research: The role of deliberate practice in the development of highly effective psychotherapists
This 2015 paper is the first study on deliberate practice in psychotherapy. This was part of my doctoral dissertation. Some of the findings were not in the peer-reviewed article. If you are interested, read the thesis for more.

Reflection:
My suspicion is that there is a self-selection bias of therapists who gravitate towards the idea of deliberate practice.
